Restaurant Manager of the Year |
This award
seeks to recognise a Restaurant Manager who is professional
and knowledgeable; and possesses a high degree of competence
in managing a successful restaurant operation. The nominee
must be a Singaporean, Permanent Resident, or a non-Singaporean
residing in Singapore. He / She must have been working
for a Singapore-based organisation or a franchise / branch
that is located in Singapore for at least a minimum of
one year (as at the time of nomination). |

Philippe Pau
L’Aigle d’Or Restaurant
|
Born
in Bordeaux, Philippe Pau’s humble
beginnings saw him working as a commis barman,
dishwasher, and later a trainee as a waiter.
His break came when he was given the chance
to learn the ropes from two-Michelin starred
restaurant Relais & Châteaux in
Brittany. With his newly acquired skills,
he moved to England and worked his way up
to restaurant manager in restaurants such
as the Lucknam Park Country House Hotel,
where he stayed for four years. In need
for a change of environment, Pau shifted
his interest to Dubai, and then to The Plantation
Club in Seychelles. He finally made his
way to Singapore in 1997 and made his way
around the service platform of restaurants
like The Cellar Door Restaurant & Deli,
ASIAN, and L’Aigle d’Or Restaurant,
Berjaya Duxton Hotel Singapore, where he
is operations manager.

Jean-Philippe Joye
DUO
|
Looking
at the flair that he possesses, it might
surprise one to know that Jean-Philippe
Joye never had any formal training in the
hospitality line. But hard work and a passion
for what he does have certainly pushed him
up the competitive food and beverage ladder.
Having held positions at Club Mediterranean
in over 14 different resorts, Salut French
restaurant and Mandarin Hotel Singapore,
Joye aims to adopt a casual yet refined
approach to his service – one that
is not imposing since privacy is the priority
at his current post, DUO. |

Stephane Colleoni
Senso Ristorante & Bar

Stephane
Colleoni is restaurant manager and one
of four owners of the most elegant Italian
restaurant along Club Street, Senso. Colleoni’s
six years spent in Singapore has weaved
an intimate relationship between him and
the local restaurant scene. His passion
for the culinary arts has seen him through
his career at some of the world’s
leading restaurants, gaining him an irrefutable
wealth of experience and knowledge that
remain his guiding principle in ensuring
the utmost level of quality service and
consistency at Senso. Colleoni’s
climb to success started in France, where
he worked at Le Jules Vernes Restaurant
in the Eiffel Tower before moving on to
manage the Duplex restaurant Paris, and
later become the premier máitre
d’hotel at Ristorante Bice
in Paris. His professionalism has garnered
him a third nomination for ‘WMF
Restaurant Manager of the Year’
in the WGS Awards of Excellence 2004.
