Lai is capable of working long hours and possess a strong initiation which enables her to motivate her team. Before embarking on the path to managerial success; Lai earned a degree in hotel management and attended numerous workshops which had prepared her for life at Saint Julien. Lai’s efforts have paid off; she was awarded the Restaurant Manager of the Year 2005 in World Gourmet Summit Awards of Excellence 2005.

Collenoi’s extensive experience includes being employed at some of the world’s leading restaurants such as Bice in Paris, Martinez Hotel in Cannes and Savoy Hotel in London. His dedication to pleasing his customers has won him continuous nominations and awards. Colleoni was nominated for the World Gourmet Summit Restaurant Manager of the Year for four years consecutively and award recipient in 2003.
