Chef Daniel began his 25-year career by building his foundation skills at leading pioneer French restaurants Au Petit Salut and Les Amis in his early years, before taking on the role of stagiaire at Michelin-starred restaurants La Gavroche by Michel Roux Jr, and The Oak Room by Marco Pierre White. He joined the Marmalade Group for 4 years before setting his sights on international fine-dining restaurants in London, Hong Kong (The Fourth Floor at Harvey Nichols) and Shanghai (La Plantane with Justin Quek).
In 2008, the well-seasoned chef returned to Singapore and took on the role of Executive Chef of then-brand-new restaurant & bar, The White Rabbit by The Lo & Behold Group. The restaurant won San Pellegrino Best Restaurant of the Year at World Gourmet Summit 2010 and the Singapore Tourism Award’s Best Dining Experience in 2009, amongst other accolades. 2 years later, Chef Daniel made his debut as Founder & Executive Chef of The Disgruntled Chef at Dempsey Road.
Under his helm, the restaurant won multiple awards including Travel + Leisure’s Best of Asia in 2010 and the recipient of G Restaurant Awards in 2013 & 2014. Shortlisted as one of the “Chefs To Watch” by The Peak Gourmet & Travel (2016), Chef Daniel continues to diligently practise classical French cooking techniques at The Lo & Behold Group, assuming the position of Group Culinary Director. Arguably one of the top F&B groups in Singapore, Chef Daniel will manage The Lo & Behold's portfolio of restaurants. His role will encompass overseeing food quality and consistency as well as spearheading the various R&D programmes at the different venues to constantly raise the bar for food credibility across the group. - The Lo & Behold Group is a hospitality company that creates, owns and operates a series of timeless, thought-provoking concepts, each with a unique story and a distinct perspective on the cultural-culinary landscape.
