With 12 years of culinary experience under her belt, Tamara kickstarted her career in Mexico City in traditional restaurants. She then came to Singapore to work in the opening of contemporary Mexican restaurant – El Mero Mero – the first fine dining Mexican restaurant to ever open in the country. Later, she moved on to head the kitchen at The Latin Quarter, where her love for Latin food grew. She then travelled to Peru to train under the prestigious Rafael Osterling (#19 in Latin America 50 Best Restaurants 2019). Having worked at Cevicheria “El Mercado” in Lima, she understood the immense culinary heritage that Peru has to offer. In 2017, Tamara was tasked to head TONO Cevicheria of OLA Kitchen Group. She developed a repertoire that was inspired by her culinary background, putting out innovative dishes that were a nod to her Mexican heritage.
