Bruce is one of the key members who started the F&B sustainability council in Singapore and has spearheaded sustainability choices across The Providore brand. Since 2018, the use of plastic straws has been stopped across all outlets, thus helping to significantly reduce the amount of single-use plastic waste. In addition, one of Bruce’s core beliefs is in making responsible choices when it comes to sourcing for products, packaging, and ingredients, and bringing in quality and ethically produced products.
The above is an ongoing challenge because in relation to the vast array of consumable goods available in the hospitality industry, the pool shrinks considerably when you put an environmental and sustainable filter on. For example, when The Providore was seeking to do away with plastic straws across the business, finding a product that was the right quality, price point and yet readily available in Singapore was a challenge.
Bruce has almost always had to look overseas for innovation in this space and thus, under his management, The Providore brand is often one of the first to import a product for use across the business. This takes both time and effort, which Bruce firmly believes a good investment for the future of the environment, and the brand.
