This Irish chef’s impressive career has taken him to all corners of the globe.  From Ireland to Australia to Asia, he has worked in award-winning restaurants and hotels, including the iconic Mietta’s in Australia.  His talents saw him received the prestigious Michelin-star in 1994 at the Park Hotel Kenmare, Ireland. His commitment and passion for culinary excellence has been recognised with numerous other award and accolades, including winning the World Gourmet Summit Awards of Excellence Executive Chef of the Year in 2004. Continuously outdoing himself as the executive chef of Grand Hyatt Singapore, he is once again a finalist for this prestigious award.
