Chef Laurent started as an Assistant Pastry Chef at the age of 17, and worked through the ranks for 13 years before becoming an Executive Pastry Chef. Despite being the Current Chef Chocolatier/Director/Owner of two café and chocolate bars, Laurent still finds time to take in apprentices and makes a conscious effort and time to impart his skills to his apprentices.
